Storing eggs
Store in a cool place
Use in rotation to sell by date
Store away from strong smells with points facing down
Using eggs
Use at room temperature
Cook egg mixtures gently
Cool hot mixtures slightly before adding cold eggs
When wisking eggs, ensure egg is fresh + there are no traces of shell or yolk are visable
Batters
Batter= mixture of flour, eggs + liquid
Air is raising agent
Beat well to incorporate as much air as possible
