- today, a gyropalette is used which is more efficient, taking one week and holding up to 504 bottles
What is degorgement?
When the neck of the bottle is dipped in freezing brine solution to freeze the sediment with the crown. The pressure within the bottle then pops the cap and the sediment goes out with it

Also called liqueur d’expedition, it is a mix of wine and sugar
