Full-bodied and heavy/fruity in nature.
Aged in barrels for longer periods of at least three years.
Why does spirit strength affect maturation
Range of congeners extracted from wood varies with ABV
How maturation time impacted
Water-soluble congeners such as glycerol and sugars are extracted at lower concentrations.
ABV-soluble eg lactones are at higher concentrations.
Rum aged at 70-80% abv,
Rum can also be aged at higher strengths, as this minimises the number of barrels used. These barrels, although already used, can still be costly to the rum producer
What is very important in Rum maturation
Esterification is very important in developing the flavour profile of rum.

Why isnt Rum aged as long as whisky or bourbon?
High flavor levels of oakiness are not needed

More active eg more congeners in darker rums
