Q

What is the traditional method of heating agave inulin for tequila?

A

Piñas cooked inside a stone-lined earthen pit
3m wide
Use oak or pine with larger rocks around the wood
Creates a dome where the piñas sit atop the rocks
Piñas covered with straw or agave bits
And then cover in dirt
Cooks for serval days

12
Q

Describe an autoclave function

A
  1. autoclave loaded with Piñas
  2. Closed, locked and sealed
  3. Steam is pumped in creating pressure
  4. Initial steam melts agave wax and dirt
  5. Steam heats un pressure to 1.2kg/cm2 (118 kPa) and 121° C
  6. Steamed turned off and piñas cook for 8-16hr

14
Q

Why is a diffuser controversial for agave?

15
Q

How does a diffuser work?

A
  1. Plant material must be broken down before entering
  2. piñas chopped and shredded
  3. fibres feed into diffuser that are pressurized and sprayed with hot water and steam
  4. This rinse fructans
    5, Juices moved to autoclaves
  5. Sometime sulphuric acid is used to accelerate Fructan breackdown

A

Acid hydrolysis

18
Q

What is a Tahona?

A
Traditional stone to crush agave
1.5m diameter
.5m width
Moves around in a circle
Can weigh over 1.5T
Used donkeys now mechanized
Traditional for mezcal
19
Q

What are the fibers called for tequila

A

Bagazo

20
Q

How are Bagazo used?

A

Fuel
Fertilizer
Furniture stuffing

21
Q

What producers ferment with the fibres

A

Typically mezcal producers

22
Q

Why ferment with fibres for mezcal?

A

More pronounced flavors

23
Q

Who regulates tequila production?

A

Consejo Regulador del Tequila (CRT)

24
Q

What is Mixto Tequila

A

Allows use of up to 49% fermentables such as molasses, sucrose, glucose etc in tequila

25
Q

Who sells more Mixto Tequila or Agave?

A

Mixto
