1st Distillate 25-30% ABV - no cuts
What are most commons stills?
Pot stills usually in sequence
What are tequila still made from?
Generally all or mostly copper
What is unique about the swan neck?
Usually wide and tall sometime as wide as the boiler
What is the final ABV of 2nd distillate?
55 - 60%
Why? to avoid diluting with water
Also tend to cut tails late reducing ABV but more congeners
What is Mezcal
An agave spirit - much older than tequila
How is Mezcal produced?
Small batch farm product
How do small Mezcal producers survive?
Coops
According to the Consejo Regulador del Mezcal (CRM), three types of mezcal producer are legally recognised:
Ancestral
Artisanal
Industrial
Who has the most freedom in mezal distilation?
Industrial producers - can use continuous columns
What are Artisanal Mezcal producers restriction on
Distill in clay or copper pot stills
May use Agave fibers in ferment

What are the pros/cons on clay pot stills?
Pros - cheap, add flavors
Cons - very small, time consuming, breaks easy
