What is sensory analysis
Scientific discipline used to measure, analyse and interpret reactions to the characteristics of food as perceived by our sense
Organoleptic properties
Sensory properties of food detected by sense organs
Why is sensory analysis used
For new products to determine if they are liked
For modifications - to see if consumers notice a change eg if a low fat version is made or a new ingredient is used
Own brand- to see if there is a noticeable difference between original and own brand
Quality- if the taste matches description
