Iron Flashcards
What is haem iron known as
Ferrous
What is non haem iron known as
Ferric
What type of iron isn’t easily absorbed and must be turned into the other
Ferric must be changed to ferrous
What are sources of haem iron
Red meat
Offal
Poultry
Meat products
What are sources of non haem iron
Cereals
Pulses
Eggs
Green leafy veg
What are the functions of iron
Make red blood cells and forms haemoglobin
Forms myoglobin which carries oxygen to muscles
Works with enzymes to release energy from food
What are deficiency effects
Anaemia due to lack of red blood cells and haemoglobin - tiredness, paleness, dizziness
Muscle fatigue
Loss of energy
What % of iron is absorbed
15
What factors assist iron absorption
Eating haem and non haem together
Eating foods high in vit c as is changed non haem iron to haem
Hydrochloric acid in the stomach changed non haem to haem
What factors hinder iron absorption
Tannins in tea and coffee bind to iron
Excess dietary fibre binds
Phytic acid
Oxalic acid
