method 1 of rose wine: short maceration
- same process as red wine
- maceration only lasts between 2 hrs - 2 days, fermentation takes place without skins
- intensity will vary depending on length of maceration
what is important to note about rose wine with short maceration?
grapes are harvested early because they need more acidity and less sugar - have less tannins in rose so need more acids for balance
method 2 of rose wine: saigee/blending
- usual process for red wine
- as must is fermenting, small fraction (10%) of juice is moved without skins to a different vat to complete fermentation as rose
- red wine benefits as it is more concentrated
- this type of rose can be just intended as a byproduct
what happens to resulting rose from method 2 saigee/blending?
resulting rose typically has more color, more alcohol and less acidity
what does rose typically end up like
middle of red and white; citrus and red fruit, typically does not age well
