Chardonnay, Pinot Noir, Meunier, Ortega
Germanic varieties like Bacchus, Reichensteiner and the French hybrid, Seyval Blanc are widely planted and some are used to make fruitier, simpler styles of sparkling wine via the Charmat method where the second fermentation takes place in tank. These varieties are also used to produce still wines
For PDO English sparkling wine, only six varieties are
allowed:Chardonnay, Pinot Noir, Pinot Noir Précoce (a
mutation of Pinot Noir that ripens two weeks earlier than
Pinot Noir), Meunier, Pinot Blanc and Pinot Gris
Chardonnay, Pinot Noir, Dorn-felder are now appearing in still wines with more regularity, and other higher-quality varieties such as Albariño are being planted
