Q

When is chymosin secretion at it’s highest?

A

during the first few days after birth, then declines and is replaced by secretion of pepsin.

Q

How does chymosin work?

A

it proteolyse and inactivates kappa casein, converting it to para-kappa- casein –> smaller protein called macropeptide.
Para- kappa-casein can not stabilize micelles and the calcium-insoluble caseins precipitate –> curd.

Q

Chymosin -Casein formula?

A

Chymosin + casein = soluble paracasein

Paracasein + Ca2+ = insoluble paracasein calcium.

Q

What will happen when adding Ca2+ to milk that is balanced (treated with anticoag.)?
