Carbohydrates Flashcards
Sugars
Sugar is a form of carbohydrate which is converted into glucose by the body. Sugar has an abundant amount of sources and is used to supply the brain with glucose and provides energy to the body.
Starches
Starch is a carb, and a natural component of most plants, fruits, veg and grains. Starch is odorless, tasteless and is a complex carb. Starch breaks down into glucose, providing energy and fibre to the body and it gives a sense of fullness.
Pectin
Pectin is a polysaccharide derived from fruit and vege. It is a fibre that contains pectinic acids, is water soluble, and it holds cell walls together and it is a gelling agent and is used to solidify jam.
Pectin helps clear the digestive system. Slow gastric emptying, improvement of physical bowel function, reduces glucose and cholesterol absorption and increase of fecal mass excreted.
Dietary fibre
Dietary fibre is a complex carb that cannot be absorbed into the body or digested. It is made of indigestible parts or compounds of plants.
Dietary fibre gives a sense of fullness, improve cholesterol and blood sugar levels, improves digestive health and regular bowl movements.
