Acidity
Different microbes grow optimally in different ph levels, given the right ph, bacteria can grow quicker than normal (e.g. acidophiles grow best at pH < 5, neutrophiles grow optimally at pH between 5 and 9, and alkaliphiles grow fastest above pH 9 - these are 3 subgroups of bacteria).
Temperature
Bacteria that causes food poisoning grows best at 5 degrees Celsius to 60 degrees Celsius.
Time
Bacteria growth is exponential, so the more time it has been give to grow, the more it will grow by.
Oxygen
Bacteria can only grow in the presence of oxygen, without it, bacteria cannot propagate.
Moisture
Moisture is essential in bacteria growth, food with a higher moisture content are more susceptible to contamination.
