Compare ancient wheat and modern “dwarf” wheat.

Einkorn is a diploid species related to durum and modern wheat. It has never been hybridized and has A Genome for gluten, which means this type of gluten does not even register on the Elisa Test. It is superior to hard red wheat, or modern wheat, because it supplies higher levels of protein, fat, phosphorus potassium, pyridoxine lutein and beta-carotene. It’s also much lower in problematic gluten and does not hvae the alpha gliadin protein which triggers celiac symptoms.

Modern wheats are tetraploid and fall under six categories: hard red winter, hard red spring, soft red winter, soft white, hard white and durum. Modern wheat was developed via cross-breeding and crude genetic manipulation, which is why the nutrient and protein composition is less nutritious than Einkorn. It also contains amlyopectin-A, which is quickly absorbed, causes the blood sugar to spike and crosses the BBB. There are 100 types of gluten protein in modern wheat.
