What happens if you put oil and water together?
They separate from each other, forming two layers
What happens if we shake, stir or beat the liquids together?
They form tiny droplets that can be slow to separate. This type or mixture is called an emulsion
What is an emulsion like?
Opaque and thicker than the oil and water they are made from
What is good about an emulsion compared to oil and water?
It improves their texture, appearance and their ability to coat and stick to solids
What are some examples of emulsions?
Milk, cream, salad dressings and ice cream or water based paint
What are emulsifiers?
Substances that help stop the oil and water from separating into layers
What do emulsifier molecules have?
A small hydrophilic part and a long hydrophobic part
What is the hydrophilic part attracted to?
Water
What is the hydrophobic part attracted to?
Oil (tail)
How do hydrophilic and hydrophobic parts work?
Hydrophobic parts of emulsifier molecules go into each oil droplet so the droplets become surrounded by the hydrophilic parts. This keeps the droplets apart in the water, preventing them from joining together and joining out
