6.2 Cooking With Vegetable Oils Flashcards
What are the boiling points of vegetable oils like?
Higher than water
What kind of temperature is food cooked at in oil?
High
What does it mean if food is cooked at a high temperature?
It is cooked faster
What does oil change about the food?
Flavour, colour and texture
What happens when food is cooked in oil?
Some of the oil is absorbed so the energy content of the food increases
What can unsaturated oils be reacted with and why?
Hydrogen so that some or all of the carbon-carbon double bonds become singe bonds
What is hydrogenation?
Reacting unsaturated oils with hydrogen so that the carbon-carbon double bonds become single bonds
What type of conditions is hydrogenation done in?
60 degrees using a nickel catalyst
What are oils called once they have undergone hydrogenation?
Hydrogenated oils
What are the melting points like of hydrogenated oils?
Higher than normal oils because they are more saturated
What is hydrogenation also called and why?
Hardening because hydrogenated oils are solids at room temperature
What are hydrogenated oils used for?
SPreads and to make pastries and cakes that require solids and fats
