How are vinegars made?

A

Vinegar is traditionally produced by two-stage fermentation of a liquid carbohydrate into alcohol and then into acid. A sugary liquid, typically a fruit juice such as apple, grape, or plum, or a mash of rice, barley, or other grain, is first fermented by yeast into alcohol, then Acetobacter bacteria colonize the alcohol and ferment it into the dilute acetic acid commonly known as vinegar. Acetobacter are ubiquitous in most environments and can be carried through the air or on the feet of fruit flies (there’s a pretty thought!); given the right temperature and environment, these bacteria will readily colonize almost any type of exposed alcohol.
