Give two reasons veg oils are important foods?
They contain nutrients and provide us with lots of energy. They can also be used as biofuels as they release energy when they are burnt in the air.
What do unsaturated oil molecules contain?
A double bond
What happens to bromine water when it is reacted with unsaturated oils?
It turns from orange to colourless.
What are the advantages of cooking with veg oils compared with water?
Veg oils boil at higher temps than water so food is cooked quicker in veg oils. Foods cooked in veg oils are crispier and more golden than foods cooked in water.
What are the disadvantages of cooking in oil compared with water?
It is less healthy as it contains more energy.
How are veg oils hardened and what is it called?
Veg oils are reacted with Hydrogen so the double bonds become single bonds. This is called Hydrogenation and it is done at 60 degrees using a nickel catalyst.
In what two ways can veg oils be extracted?
Distilling and pressing.
