Where is Tequila made of?
Agave; only one permitted species
Agave Tequilana (Blue Agave) locally known as the Maguey Azul or Blue Maguey
Max 49% of other sugars is permitted
Four classifications of Tequilla
Blanco or Silver Tequila -> Clear and unaged or aged up to 60 days
Joven Abocado or Golden Tequila -> Generally an unaged tequila mixto with flavourings and/or colourings added. Caramel is often used
Reposado -> Aged in wood for 60 days up to 1 year
Anejo -> Is aged in wooden barrels no larger than 600 L for a minimum of 1 year
Extra Anejo or Ultra aged -> is aged in wooden barrerls no larger than 600 L for a minimum of 3 years
