Cuvee Close (Charmat)
Thanks or bulk method.
Still wine is pumped into a tank together with yeast and sugar. The temp is controlled to start the secondary fermentation. Completed in a matter of days. Then filtered and bottled under pressure.
Vinos espumosos
Sparkling wine form Spain made by the carbonation or transfer method
Muscat d’Asti en Prossecco
Made by the Cuvee Close method
Fransciacorta
From Lobardy made by the traditional method
Transversage method
Transfer method. In this method, the second fermentation and degorgement is carried out in the bottle as for champagne. But the wine is then chilled and placed (transferd) into a tank. The dosage is dan added and it is filtered and rebottled under pressure. This method is used for quarter and large format champagne bottles
Methode Dioise Ancestrale
The wine is bottled before finishing fermentation. The wine continues to ferment producing carbon dioxide gas in the bottle. No addition of liqueur d’expedition, but remains sweet due to natural sugar still in the wine. Resulting wine is generally slightly cloudy
Carbonation method
Quickest en cheapest method. The wine is chilled in large tanks and carbon dioxide is pumped into it. The wine is then bottled under pressure. The resulting wine is a fizzy drink in the glass with large flabby bubbles which do not last long.
