A

The Wine of Origin system of South Africa that chemically analyzes wines, regulates blending and % rules, & delimits regions.

What are the WO’s blending and % rules?

A

If wine comes from specific area, it’s gotta be 100%
If single vineyard, must be 100%, from a small contiguous parcel less than 6ha.
If estate wine, must be vinified & bottled on property of 100% estate fruit from a single contiguous parcel.
85% stated variety, from approved cultivars
Must be chemically tested prior to release
Cap classique wines are permitted under WO

A

SA traditional method sparklers from chard, pinot, occasionally pinotage. Graham Beck’s the producer to know; his wines are a crazy good value.

What is Paarl like & what wines are produced there?

It’s warmer & more continental than Stellenbosch, & produces Cab, Chard, Shiraz, Chenin Blanc, & Pinotage. It’s famous for the KVW (founding SAWIT partner), & Nederberg Wine Auction, where rare cape wines are sold. Nederberg famously produced South Africa’s first botrytized dessert wines.
