Choco fudge topping
Highflame Allow water to boil (212F) Turn off flame as soon as water boils Immerse scholle bag for 10mins Remove bag from water Massage w/ clwan towel to EVENLY DISTRIBUTE HEAT INSIDE Temp of topping: 95-105F Transfer preheatt choco topping into s/s jar. Place in dispenser SL: 5d
Discard LO choco topping if
MDF
Mold/yeast formation
Fermented odor/flavor
Discoloration
Reheat of LO choco topping
Fill pot w/ at least 2-3inches from the bottom
Allow water to boil over high flame
Turn off as soon as water boils
Immerse stockpot into the water for 10mins
Do not let any water mix w/ the choco fudge
Stir using spatula to evenly distribute heat
SL of reheated choco topping: 2d
Transfer content to s/s jar. Place in the fudge dispenser
Do not mix LO choco fudge w/ new choco fudge
Discard SO choco coating if
DOOPS
Discoloration Off odor Off flavor Presence of molds Signs of infestations
SL of choco coating

Unopened pail DP+6m
Open pail DO+14d
Stir coating using what until mixture is what
Spatula
Homogenized
Scrape bottom of the pail during stirring
Mix until no lumps at the bottom of the pail
Max lvl and min lvl of coating in the round inset
Max 1/2 inch before the brim
Min 1/2 inch of the round inset
Fill inset of choco coating to 3/4 lvl
Rice crispies
Open new pack if no LO
fill pan w/ approx amount needed for the day
Place 1tsp inside pan cover tightly
