Difference between acetic as opposed to malic or tartaric

Acetic is volatile as opposed to Malic/Tartaric which are fixed

What two strains of bacteria cause which types of VA?
A
Vinegar aromas…. Gluconobacter Oxydan and Acetobacter aceti. G oxydan comes on moldy fruit and feeds on sugar at the start of fermentation. A aceti appear post fermentation and require oxygen to grow. It is especially prevalent when wines aren’t topped off or when they are racked/oxidized.
