fit or proper for use under Jewish dietary law. permitted.
what things are entailed in kashrut?
grape products, animals permitted, method of slaughter, exam of slaughtered animal, parts of animal forbidden, prep of meat, law of meant + milk, products of forbidden animals, exam for insects + worms
grape juice + products
wine, wine vinegar, balsamic vinegar, grape juice, jelly, cognac.
only kosher if produced by jews. – rabbi supervision, food facility must be kosher, only jewish ppl can produce kosher foods.
Land animals permitted?
meat + milk of ruminating animals that have cloven (split) hooves.
kosher land animal permitted vs halal ?
split hooves.
- halal say carnivore
kosher say ruminate
birds permitted?
flesh + eggs of bird w crop, gizzard + extra talon.
= chicken, turkey, duck, goose
water animals that are kosher?
fish that have fins + scaled.
- eggs from fish with fins + scales.
slaughter + prep?
by trained individual who is practicing jew.
trachea, esophagus, jugular vein, carotid artery severed = animal bleeds out.
– slaughter house blessed, no prayer before kill (vs islam, before before each kill)
- carcass unblemished w no disease. lungs inspected.
- doesnt apply to fish
forbidden parts of animal?
land animals:
sciatic nerves + major blood vessels.
hindquarter.
fat around stomach, intestines, organs, + flank.
prep of meat?
blood removed (birds + mammals) soaking + salting: think grains, salt turns red on meat = soaks up blood. => broiling
law of meat + milk
not eaten togethre.
after eating meat, wait 6 hours to eat dairy. after dairy, wait 1 hr to eat meat.
separate dishware to prevent contamination
define parve/pareve
ritually neutral foods. cannot pollute other foods.
