How is Eszencia made?

A

TRaditional winemaking doesn’t apply to Eszencia. The sugar is so high that yeast can’t survive in the wine and only on the surface. The wine takes forever to ferment because of this. Glass Demi Johns are used and sometimes it takes 7 years to reach 1.6 percent. This format prevents oxidation and is a very reductive environment.
