What is coeliac disease?
A condition which occurs when the body reacts to a protein called ‘gluten’ found in cereals
What happens when the body cannot tolerate gluten?
Villi (small intestine) are not formed properly
What happens when villi can’t form properly?
An individual will not be able to absorb nutrients properly
What does healthy villi look like?
Long, finger-like projections which absorb gluten
What does non- formed villi look like?
Small, not formed, cannot absorb gluten
Cereal grains which contain gluten?
Wheat, barley, oats, rye
Food which contains gluten?
Pie, biscuits, bread, pasta
Foods that should be avoided by coeliacs?
Soups, sauces, gravy, ready-made meals
Symptoms of coeliac disease?
Nausea, tiredness, constipation, reduced growth
Gluten free foods?
Rice, nuts, potatoes, corn, meat, fish, fruit, veg, milk, dairy
Management of coeliac disease?
Individuals must remove gluten from their diet completely, check labels and eat carefully
