WHAT IS FERMENTATION

A
  • fermintation is a cellular respiration pathway that transfers electrons from nadh produced during glycolysis to an organic acceptor molecule
    much less efficient at supplying energy than aerbic respiraiton… only produces the amount of atp(2) that isgenerated in glycolysis

lactate fermentation

A
  • carried out by some single celled organisms and some animal muscle cells taht are temporarily without oxygen
    1. the pyruvate reacts with nadh to reoxidizw it to nad+ whiole being converted to lactate
    2. the reoxidzed nad+ allows glycolysis to continue
    3. the lactate is secreted into the surrounding medium
    4. in animals, oxygen is required to metabolize the lactate. the amount required is called oxygen debt

ethanol fermentation

A

yeast and some bacteria carry out ethanol (alcohol) fermentation when aerbic respiration cannot be performmed. these organisms are called facultative anaerobes.
1. the pyruvate loses a co2 and is converted to acetaldehyde.
2. acetaldeyhyde is reduced to ethanol and nadh is oxidized to nad
3. the products of ethanol fermentaiton are used in foods and drink industry to produe desired reuslts in breads, wines and beers
