What means Cuvasion?
*Refers to to the maceration of the grape skins (pomace) in the fermenting juice during red wine production.

*This is the process of allowing the solids to settle out from the must before racking.

*Microclimate-refers to a small group of vines, or the air above.
*Mesoclimate- refers to small vineyard or even a hill side (Mosel).
*Macroclimate-refers to a wine district or a Region.

*The smallest geographical unit of land within a vineyard.

*Refers to a grapes which have been shrivelled to increase the sugar content.

*Refers to the process of punching down the cap during fermentation.
What is Remontage?
*Refers to the process of pumping the fermenting juice over the cap.
What is Veraison?
*Is the stage in the grape cycle when the grapes changes color.
It is the beginning of the ripening period.
What is Sussreserve?
*Unfermented grape juice used to sweeten wines in Germany.
What is Soutirage or Racking?
*Is the transfer of a wine from 1 container to another, leaving the less behind.
