Describe Manzanilla style?
*Matured in Sanlucar de Brameda.
*Dry, with yeasty nose, slightly bitter taste, and some salty notes caused by the flor.
Describe Fino style Sherry?
*Less dry than Manzanilla, delicate and matured under flor.
*Fortified to finish between 15.5-17 % abv.
Describe Amontillado Sherry?
*Starting its maturation as Fino Sherry under flor for min of 2 years.
*Finishing as Oloroso style (oxidative) with further fortification and matured for 2 more years.
*Must be dry with min 16%abv.
*If sweetened must be sold as (medium cream, or cream Sherries).
Describe Palo Cortado Sherry?
*Its a style between Fino & nutty richness of Amontillado with very unique characteristics.
*This wines are rare and very expensive.
Describe Oloroso Sherry?
*Fortified to 17-18%abv, may be dry or off-dry.
*Rich and complex with slightly baked oxidative flavors.
Describe the natural Sweet style wines?
*Made from sun-dried Pedro Ximenez or Muscatel grapes and fermented to 5%abv.
*Fortified to 15-22%abv.
*Deep colored, verry sweet, with dried fig, apricot and liquorice flavor.
Describe Pale Cream, Medium Cream and Cream Sherry styles?
*Pale Cream= dry Sherry, blended with RCGM and fortified to 15.5%abv.
*Medium Cream=similar to pale cream RCGM, but amber in color with nutty aromas. Fortified to 15-22%abv.
*CREAM-best from Oloroso, blended with PX, & fortified to 15-22%abv.
Describe PX style Sherry?
*Produced entirely from sun-dried Pedro Ximenez grapes matured for many years.
*It is also sweetening agent for Sherry.
Describe VOS style Sherry?
*(Very old Sherry) indicates that the wine has an average age of 20 years in a sealed botas.
Describe VORS style Sherry?
*(Very old and rare Sherry) indicates that the wine has an average age of 30 years in a sealed botas.
