What are Bitters?
*Spirits which have been infused with strongly flavored plants & roots, and served as aperitifs, digestifs, or used in cocktails.
Describe Angostura bitters?
*Produced in Trinidad from rum, plants & spices with 44.7%abv.
Name other well known bitters?
*Aperol-Italian
*Campari-Italian
*Fernet Branca-Italian digestive
*Jagermeister-digestive, ice cold
*Underberg-Germany, digestive
What is Mezcal?
*Produced in Mexico from over 10 varieties of agave(Espadin agave the most common).
*Fermented slowly in wooden vats, twice distilled and aged for
6 months, 1 year, or 3 years.
What you know about Tequila?
*Produced from one species only, Agave Tequilana (blue agave).
*If sugar cane or molasses added is known as (Tequila mixto).
*Aged for between 8 months and 7 years in white oak.
What is Sake?
*Produced in Japan from fermented rice.
*The more the rice is polished the higher quality.
Describe the types of Sake?
*Junmai-shu = the % of rice polished must be stated on the label.
*Honjozo-shu= Polished to 70%, low quality sake.
*Ginjo-shu=Polished to 60% it can be, (Junmai Ginjo or Honjozo Ginjo)
*Daiginjo-shu=polished to 50% it can be (Junmai Daiginjo or Honjozo Daiginjo.
Describe Labelling terms for Sake?
*Genshu= means undialuted and is high in alcohol.
*Kimoto= produced with wild yeast, and has earthy favors.
*Koshu= means aged Sake.
Namazake=means is unpasteurized. All the above Sake can be Namazake.
*Nigorizake=means unfiltered Sake
