Greeting/Mark Table
Within 1 minute of being seated
If guest made reservation, use the name on the chit to address them. Introduce yourself, pick up the reservation sign and mark with beverage napkins.
Drink Order
Within 4 minutes of being seated
Always take a card when starting a tab. If guest chooses not to start tab, close their checks out right away after delivering drinks.
Micros: Table # - Last name on card.
Food Order
Upon beverage service or 4 minutes after
Keep in mind the space of the table and how much food they are ordering.
Mark Table
Immediately after putting order in
Make sure guests have all the appropriate dinnerware on the table prior to firing their 1st course.
Table Check Back
Within 2 minutes of food delivery
Promptly check for flavor, taste, correct order and quality.
Clear Plates and Silverware
Ongoing
Never on the table but in your hand.
Check Presentation
After table is cleared
Make sure check is presented at least 15 minutes before the arrival of the next reservation or before the end of table time limit.
