Tying in New England Lobster Salad and Sushi together.
Filled like a salad for a lobster roll with lemon, celery and mayo.
Hamachi Tartare Roll

Sushi and tartare together in this dish.
Inside: avocado and tomato
Roll is cut into 6 pieces and stood up on its end. Each roll slice is topped with diced hamachi tartare that is dressed with ginger soy sauce, sweet onions and cucumber.
Red Dragon Roll

Empire’s spin on a traditional spicy tuna. “Dragon” means something on top.
On top of this roll is a mix of raw blue fin tuna and house made spicy mayo. On top of that is sriracha and scallions.
Inside the roll is kaiware daikon sprouts, cucumber, crispy tempura bits and avocado.

Extremely light and seasonal roll that consists of sliced tuna, salmon, hamachi and lettuce.
Roll is wrapped in rice paper and lightly drizzled with citrus soy dressing.
Paired with Kaiso Seaweed Salad.

Topped with fresh wild Alaskan Sockeye Salmon and finished with yuzu, mango sauce and garnished with ikura and fried shallots.

Torched Yellowtail

Roll contains creamed corn, pickled radish and tempura bits in the inside. Wrapped in nori. Yellowtail is torched and laid across the top. Topped with avocado salsa and rice crispies. Drizzle of eel sauce and spicy mayo.
