A

Cod is marinated in mirin, soy and sake. Broiled and served with BBQ bok choy (stir fried with Taiwanese BBQ sauce that contains shrimp)

Served with a swipe of white miso and finished with an edamame vinaigrette (red onion, chives and sentosa dressing).

Beef Short Rib Moo Shu

A: Gluten, Sesame, Shellfish (Oyster Sauce)

A

Traditional Chinese dish usually made with pork but at Empire it’s glazed stew of braised short rib meat, eggs, mushroom, lily bud, carrot, sherry and shaoxing cooking wine and other shredded vegetables.

Side with a side of lettuce, hoisin sauce and steamed peking pancakes.

Great dish for a large group to share.

Broiled Atlantic Salmon

A: Egg, Fish, Gluten, Sesame

A

8oz sashimi grade salmon with a herb panko crust. Served on a bed of fresh locally made spinach noodles. It’s wok tossed with julienne carrots, bean sprouts, baby spinach leaves, tomato and onion.

Salmon is oven roasted and topped with a cilantro lime sauce.

Empire Steak and Frites

1/4 fries are twice cooked - very crispy. Sprinkled with nori seasoning. Truffle and white miso mayo to dip fries. Sansho fries.

10 oz Sliced skirt steak marinated in a Kalbi Korean soy marinade.

Garnished with a salad of watercress and shaved endive dressed with a creamy ginger dressing.

Galangal Duck Breast

8oz boneless duck breast marinated with ginger soy scallion, sherry marinade - it’s pan seared to medium/medium rare.

Served sliced on top of crispy purple potatoes, a tamarind ginger shallot sauce and grilled asparagus.

Korean Rubbed Sirloin

A

Painted Hills Beef - Pasture raised, vegetarian diet, no added hormones or antibiotics. Known for its tenderness and quality. NY Sirloin Cut.

Steak is rubbed with a mix of dry spices and sugar. Steak is served over whipped mashed potatoes with chives and infused chive oil.

On steak is a mix of peppers and onions sautéed in a little oil and then glazed with equal parts of soy and sake.

Pan Roasted Chicken and Mushrooms

A

10oz ginger marinated chicken breast that’s pan seared and finished in the oven.

Topped with fresh shiitake and enoki mushroom melody. Ginger cream sauce and herb oil with jasmine rice.

Twice Cooked Spicy Pork Belly

A

Another stir fry dish. Pork belly is slowly braised in a light braised, then cooled and cut into slices. Slices of pork are manageable and are not too fatty. Slices are re-stir fried with a little soy, beansprouts, green beans and oyster sauce, Chinese celery stalks, cilantro, chili and doubanjiang sauce.

Result is very tender, lightly spicy, not overly saucy. Served with a side of jasmine rice.

Sa-cha Chicken Stir Fry

A

Simple stir fry dish. Chicken is quickly flash dried in the work and then stir fried with sa-cha sauce.

Served with sweet corn, ginger, sugar snap peas and a side of jasmine rice.

Sesame Beef

A

10oz sliced flank steak, coated in potato starch and it’s crispy fried in a wok, tossed in a sweet and sour glaze, chili oil.

Garnished with toasted sesame.
Served with broccoli florets.
