Hawaiian Style Tuna Poke
One Size
A: Fish, Nuts, Shellfish
Beachside Hawaiian dish.
Raw tuna and hamachi cut into chunks and marinated in lemon/lime juice, toasted sesame oil with a touch of EVOO, slices on red jalapeños, hijiki seaweed, diced onions and bean sprouts. Seasoned with seaweed, Hawaiian salt and relish paste (Inamona).
Dish does contain minced and roasted macadamia nuts.
Spicy Salmon “Rice Bites”
3/6 Pieces
A: Egg, Fish, Gluten, Sesame
Sushi rice pressed into a brick and wrapped in nori. It’s then cut into bite sized fingers and seared until crispy. The searing process adds a crisp texture and richness to the rice.
Topped with a salad of raw Atlantic Scottish Salmon, marinated with tempura bits, fresh red jalapeño, spicy mayo, togarashi and chili sesame oil.
Great intro for those that are beginners to sushi.
Sugi-Zai Fire

Delicately wrapped smoked salmon slices around lobster salad (made with lemon, celery and mayo).
Topped with avocado, eel sauce and gently torched on a bed of cedar paper lit on fire.
Tuna Tartare

Dish comes together by an elegant mayo based sauce of white miso pate, sweet miso paste, dry mustard and finished with champagne.
Dish is served with a side of house made, crispy wonton chips.
Garnished with diced fresh cucumber and slices of pickled (brine of dashi, mirin, soy sauce) cucumbers.
Tuna Truffle Tataki

Seared togarashi coated blue fin tuna served on a bed of julienned cucumbers, kaiware sprouts, shiitake mushrooms and a truffle soy emulsion (soy balsamic vinegar, truffle oil and olive oil)
