Lemonade: Muddle three lemons, fill with ice, top with lemonade from the gun, toss and serve, garnished with a lemon. (ALL LEMONADE IS SERVED LIKE THIS UNLESS KID LEMONADE. It’s $4 don’t skip the muddling.)

Watermelon Limeade:

Watermelon Limeade: One part watermelon puree, one part limeade, poured over ice, tossed, garnished with a lime
boozy: 2 oz pour of chosen liquor (gin, house bourbon, or rosemary vodka) and as above
To batch watermelon use a clean white bucket, remove rind, and white flesh from watermelon, cut into large cubes, break down into liquid with the immersion blender. Blend until smooth.

2 oz vodka, house mix, tossed with ice. Garnish is a lime, lemon, olive, and an oyster on the half shell from the raw bar.
A plain (no oyster) bloody can also be made for any guest who wants, the charge is $8 instead of $10, let them know that the mix contains shellfish. There is a button in the micros for regular bloody mary. No rim on regular bloody.
To make batches of Bloody mix:
In a bucket mix:
Clamato 512 oz (16 32 oz jars)
3 cups citrus (half lemon/half lime) juice 10 bar spoons full of old bay
15 bar spoons full of horseradish 25 dashes of Worcestershire sauce 15 dashes of Cholula Hot Sauce 15 dashes of Tabasco Hot Sauce 15 dashes NYC hot sauce
Fresh cracked black pepper and salt to taste

Pear-infused brandy
Slice 2 red pears, discard seeds and core. In small cambro, add 3 cups brandy,1 vanilla bean ( split and scrape bean) and sliced pears. Seal and steep for 3 days. 3 days later, remove vanilla bean. Chop another pear, discarding seeds, boil with 2 cups water and 2 cups sugar for 5min. Cool, and add to cambro. Steep 2 more days. When ready, strain and keep sliced pears for garnish.

Rosemary vodka/Habanero tequila

Rosemary vodka/Habanero tequila
Insert 2 - 3 large sprigs of rosemary into one bottle of vodka. Label and date.
Insert TWO - THREE habanero pepper (all of the seeds removed while wearing gloves) into a bottle of tequila. Label and date.
**Always taste before using a new bottle, as some peppers can pack more punch than others, dilute with plain tequila if needed.
