Jonah Crabs
Jonah Crabs can be found all along the eastern North American coast and are most abundant from Newfoundland to North Carolina. Jonah Crab legs have flakey white meat with a sweet aftertaste.
Dungeness Crab
Dungeness Crab is found along the western North American Coast. This is a purple-brownish guy with a shell about eight inches across; a big body and long legs. Dungeness crab legs have an earthy, sweet, briny, creamy taste. Unlike some other crustaceans, the Dungeness crab is not over fished and considered a sustainable seafood choice!
Blue Crabs
Blue Crabs can be found along the Gulf Coast and the southern Atlantic Coast. Heaviest concentrations are found in the Chesapeake Bay. Blue Crabs grow fast and reproduce in greater numbers than other crab species. Female blue crabs produce 1.5 million eggs a year but only two of them survive. For this reason many prefer to serve or consume male crabs over female crabs; female crabs may sustain crab reproduction and the crab species. Others, however, prefer to eat the smaller female blue crab for their sweet taste and roe. At Brooklyn Crab we strive to serve predominantly male blue crabs and #1 blues whenever possible. Males are called Jimmys and come in two sizes: #1”s and #2”s. #1 Jimmys are the largest and start at 5 1/2” point to point on the shell, but can grow larger. Unfortunately, however, male blue crabs are not always available from purveyors.
Customers are likely to inquire about the gender and size of their blue crabs. Always be sure you know what we are selling on any given night, and be prepared to respond appropriately to these inquiries. Blue Crabs have a delicate sweet flavor and flakey meat.
Snow Crabs
Snow Crabs, also known as “queen” or “spider” crabs are from the Northern Pacific and Atlantic. They are smaller than Red King Crabs. The legs are thinner, lighter in color. Snow crab leg meat is sweet and succulent meat. Snow crab legs are a good beginner’s crab. The process of eating snow crab legs is not super labor intensive and the meat is sweet and mild compared to king crab legs.
King Crabs
King Crabs are from Alaska and the Antartic and are considered the world’s most prized species. The meat of Red King Crab legs is sweet and succulent with distinct flavor of ocean salt. Male King Crabs can grow up to 24 pounds with a leg span of five feet. King Crab legs are thicker than snow crab legs. The shell is a brighter red than the snow crab and is textured with small distinguishing pointy spikes.
