Will Sherry always be fortified?
Even more fundamentally, there have been discussions over whether it will remain necessary to fortify a wine to fall under DO regulations. It would simply need to reach the required level of alcohol during fermentation. This is an overt attempt to diversify the range of styles available from Sherry to extend the region’s appeal to consumers.
