Nutritional Interactions - Nutrient-Nutrient Interactions Flashcards
What are nutrient-nutrient interactions?
- When one nutrient impacts on another nutrients bioavailability
- Nutrients effect another nutrients bioavailability in a (+) or (-) way
- Competition between elements with similar chemical characteristics
- Can be short or long term
What 4 types of interactions can occur?
- Macronutrients with vitamins
- Macronutrients with minerals
- Minerals with minerals
- Vitamins with vitamins
Why is it important to know about nutrient-nutrient interactions?
To evaluate the consequences if any of these integrations on health and disease and to understand the bioavailability of nutrients
What are the;
Water soluble vitamins,
Fat soluble vitamins,
Minerals & Trace elements
Water soluble vitamins - Vit C and B- Vits
Fat soluble vitamins - A D E K
Minerals & Trace elements - Fe, Ca, K. Na, I
What are the shared characteristics of vitamin C, vitamin E and β-carotene?
- Act as antioxidants
- React with free radicals
Ascorbic acid (vitamin C) enhances the absorption of which minerals? And reduces the absorption of what other minerals?
Enhances iron and selenium
Reduces copper, nickel and manganese
What other vitamin does vitamin C interact with for full antioxidant effect?
Vitamin E
What other mineral does iron interact with?
Is absorption enhances or reduced?
Zinc
Iron reduces zinc absorption (.vis versa)
Is serum zinc an accurate indicator of body zinc status?
No, serum zinc had limitations when used as an indicator of zinc status.
Does zinc affect iron absorption the same when taken in aqueous solution rather than in solid food?
Yes. Zinc ingested from aqueous solution impaired Fe absorption more than in solid food
In what form are nutrients with highest interaction rates taken?
As supplements
What mineral does manganese commonly interact with?
What is a common British example of reduced iron by manganese?
Iron (Fe).
Manganese in tea drinkers imposed risk of reduced iron utilisation
What mineral can calcium interact with?
What is an example of a food item than can reduce iron absorption?
Iron.
Bread on a burger can reduce iron absorption from meat by 50%
