A

A gastrique is a sweet-and-sour sauce at its simplest. You caramelize sugar (or sometimes honey), combine it with equal parts vinegar, and reduce it slightly.

Braised lamb shank, which includes the marrow bone. The name is actually Italian for “marrowbone.”
