Ingredients I Had to Google Flashcards
Yeah, maybe you know what a lot of these things are. But maybe you're a lot smarter than I am. I tried to include questions that customers tend to have, too. Just knowledge that it's nice to have handy.
Capicola
Capicola is a type of dry-cured ham, usually cut very thin, and often compared to prosciutto.
It is typically seasoned with wine, garlic, and spices, salted heavily, stuffed into a natural casing, and then hung up to cure for 6 months.
Soppressata
A cured, dry sausage product, similar to salami. Soppressata is a mixture of lean and fat cut or minced pork that’s been seasoned with salt, dried chili peppers, black peppercorns, and red wine.
Kalamata Olive
A large, dark purple olive with a meaty texture. They are named after the region in southern Greece where they are grown.
Peppadew Pepper
Small, pickled red peppers. They are not at all spicy. They are similar to sweet piquante peppers.
Mignonette
A sauce typically made with minced shallots and vinegar. Typically served with oysters.
Mesclun Greens
Mesclun literally means “mixture,” and refers to any blend of salad greens. It’s similar to what you’d find labeled as “Spring Mix” in a grocery store.
Chardonnel
A white grape hybrid. It is a result of a cross between Chardonnay and Seyval (which is, itself, a hybrid). It is late-ripening and cold tolerant.
Tabouli
(Often spelled Tabbouleh) An eastern Mediterranean salad usually made of uncooked bulgur wheat, lemon juice, herbs, and tomatoes.
(Note: Though often made with Bulgur wheat, ours is made with Quinoa instead, so it is gluten free.)
Remoulade
A slightly spicy, mayo-based sauce.
Cipollini onion
(chip-oh-LEE-nee) Small, round, Italian onions. They are much sweeter than a typical onion.
Rusk (as in, Brioche Rusk on the French Onion soup)
A hard, dry biscuit, made from twice-baked bread.
Couscous
Couscous is a type of pasta! Small pieces of rolled semolina (a type of wheat) are steamed to create couscous. It’s especially popular in North African cuisine.
Note: couscous contains wheat, and is therefore not gluten free.
