(Note: the current menu states that the pork chop is served with a sage mustard ivory sauce, but it is being served with the same lemon tahini as the Brussels sprouts. This change will be reflected in the new menu.)

Should I ask how a guest would like their Tomahawk Pork Chop cooked?

A

Nope. (Toast also no longer prompts a temperature choice.) It is always cooked to Medium. It can be cooked to well done upon request, is a guest specifies.

How are the Brussels sprouts prepared as a side item?

A

Exactly as the appetizer item, except smaller. This means that they will have marinated cipollini onion, tahini sauce, balsamic glaze, and sesame seeds.

What if someone wants to order an entree, but doesn’t like the items that come with it? What can they substitute? What can’t they substitute?

A

In general, any “side” component can be swapped for any other in a meal. That is, asparagus, carrots, Brussels sprouts, carrot mash, cauliflower mash, mashed potatoes, roasted potatoes, and fries, can be substituted for each other by making a note in Toast. However, soups and salads are sold as separate menu items, and cannot be used a substitute for an item in an entree.

What if a guest is avoiding gluten? Which sides can they eat safely? Which should they avoid?

A

Asparagus, carrots, mashed potatoes, cauliflower mash, and roasted potatoes are all gluten free.

Carrot puree is not gluten free, as it uses a wheat-containing chicken stock. Fries are cooked in a shared fries, so they are unsafe.

Brussels sprouts can be prepared in the oven to make them gluten free, but as they are normally cooked in a shared fryer, they should not be considered gluten free without this alteration. Otherwise, all ingredients in this dish are gluten free.

What if a guest is avoiding dairy? Which sides can they eat safely? Which should they avoid?

A

Asparagus and carrots are dairy free.

Mashed potatoes, carrot puree and cauliflower mash contain both butter and milk, and are therefore unsafe for those avoiding dairy.

When does the dinner menu begin? What time is the menu limited, and what can be ordered during that time?

A

Dinner menu begins at 4:30 Tuesday-Saturday, and 2:00 on Sunday.

The menu is limited between 4 and 4:30 Tuesday-Saturday, and 1:30-2 on Sunday as the kitchen switches from Lunch to Dinner.

During this time, only items that are present on both menus can be ordered. That is, all appetizers, soups, salads, bowls, and burgers. Entrees and pizzas will have to wait until after dinner starts.

When adding a protein to a salad, how does the chosen protein’s portion size and price change for a small/large salad?

A

It doesn’t! The price and portion size of the protein remains the same, regardless of the salad size.

How is the Tuna prepared when added to a salad or a bowl?

A

It’s prepared exactly as it is for the Yellowfin Tuna appetizer - sesame coated and seared, not fully cooked through.
