Lipids Flashcards
How can you tell it is a saturated fat by the structure?
The added glycerol
Do saturated fatty acids have one or two bonds?
one
true or false: Unsaturated fatty acids have single bonds
False: they have double bonds
Do polyunsaturated fatty acids have double bonds?
Polyunsaturated fatty acids have double bonds between all carbons
What does hydrogenation lead to?
It leads to trans-fats
How does hydrogenation work?
- Liquid oils converted to solid fats
- Heating veg oils in presence of hydrogen
- Double bonds in unsaturated fats become
saturated - filled with hydrogens - Trans-fat acids are produced
- Hydrogenated oil is harder at room temp
- Tub margarine is less hydrogenated and has
fewer trans-fatty acids than brick margarine - Not good for our hearts
Talk about saturated fats:
saturated fats contain no double bonds all carbons are singular bonded and all carbon atoms are holding al the hydrogen they can and usually are in animal products
Talk about unsaturated fats:
Unsaturated contains double bonds and are usually liquid at room temp and usually plant products
What is cholesterol?
Cholesterol is a waxy substance that lines our arteries and stretches them.
What types of cholesterol is there?
There is LDL which is low density lipoproteins which is bad for us and then HDL which is high density lipoproteins which is good for us.
How much does 1g of lipids give us in energy?
38kj
What are the functions of lipids in our bodies?
- it forms a layer of fat under our skin for warmth
- offers protection to organs
- Keeps hair and skin healthy
- delays hunger
- valuable source of fat-soluble vitamins K,A,D,E
