How do bile salts effect digestion, why?
Bile salts allow for emulsification of lipids and water.
How did we isolate the curds from the whey?
We strained the curds from the whey using paper towels and light pressure (squeezing)
What did we do to milk to help precipitate occur?
-Sawa added buttermilk to acidify it
-We warmed the milk to 37 degrees
- we then added rennin
How did we filter milkshakes after digestion occurred?
We used filter paper and a funnel

1: had just oil + water = no digestion
2: had oil + water + lipase = some digestion
3: had oil + water + lipase + bile salts = most digestion

Why did we acidify the milk?
To mimic acidic conditions of stomach
