- skin contact to enhance flavours
- cool fermentation in inert vessel
- fermentation stopped by fortification with spirit of 96%abv
- stored in inert vessels prior to bottling

- grapes allowed raisin on vine
- fermentation on skins
- fortification takes place when fermentation has reached 2%
- oxidative ageing
- old and large format oak used
- aged in warm conditions
