Burgundy Flashcards
Advantages of planting on slope
- less prone to frost
- protection from western winds
- better sun exposure –> marginal cool climate
- shallower soil with better drainage
- premium cru / grand cru on the slope
Natural factors of Burgundy
- cool to moderate continental climate
- rain frequently disrupts both flowering in early summer and harvest
- natural climate hazards including frost an hailstorm
- large number of geographical faults
wine-making technique of Pinot Noir
- pre-fermentation maceration (max colour and flavour)
- whole brunches fermentation (enhance fruit and floral flavour, aromatic profile)
- temperature control (cooler = fresh, warmer = more colour, flavour and tannin)
- use of oak = 12-24 months in oak + small amount of oak

Why do growers choose different clones of Pinot Noir?
- more disease resistance = important in Burgundy with rainfall
- achieve better quality = production seek quality over quantity
Why does Burgundy have high vine planting density?
- some vines have low levels of nutrients and sufficient rainfall = high-density planting is suitable
- prevent vine growth vigorously + produce a lot of green vegetative rather than fruit.
Why does Burgundy is sold in premium price?
- classified as Grand Cru = top of Burgundy
- only 33 vineyards are classified as Grand Cru, more than 1% of total production = limited quantity
- vineyard location is important = geographic faults
- best location = better sun exposure, soil drainage and protection from westerly winds
- Top quality Pinot Noir + new oak = involve more time and cost
Name 2 village appellations in Maconnais-village
- Pouilly-Fuisse
- Saint-Veran
What effect can spring frost brings to the vine
1.Spring frost occur when cold air is below 0degree.
2. Newly burst buds or young shoots can be killed by frost
3. It may cause significant damage on yield
Suggest 3 methods a grower in Burgundy can apply to minimise the risk of spring frost.
- Heaters to generate heat
- Sprinklers to protect the buds and shoots
- Wind machine to draw warm air from above.
- Location, less risk on middle of the slope.
Explain why a grape grower would choose VSP in cool climate region?
Problem: cool climate region grapes can struggle to ripen,
Do: grape grower can help the grapes to ripen by increasing their sun expsoure to sunlight and heat.
VSP is: the shoots are trained up the wires = grapes are not shaded by any shoots that night otherwise hang down.
Therefore: sunlight and heat is maximised.
