Enzymes Flashcards
what is a catalyst
(INCREASE RATE OF REACTION) a substance that increases the rate of a chemical reaction without itself undergoing any permanent chemical change
what is an enxyme
a long chain of amino acid (globular protein in tertiary structure)
active site
area of an enzyme, a small region on the enzyme where subtrate binds to, so that the reaction takes place
what are enzymes
substrace specifict (ENZYME-SUBSTRACE COMPLEX)
two theories of enzyme binding to substrate
- Lock and key (active side and substrate are complementary in shape_
- Induced fit (active site is flexible and enzyme changes slightly to math the active site )
what are factors that effect enzyme activity
- temperatuyre
- pH
- substrate concentration
what does enzyme catalysis involve
molecular motion (kinetic energy) and the collision of the substrates with the active site
draw graphs for the effect of temperature, pH and substrate concentration
how are enzymes used in immobilized industry
- enzymes need to be used repeatedly
- inventions needed to trap enzymes in place
- can be held in pace by calcium alginate; enzymes are trapped in the pores and are said to be immobilized
how are enzymes used to produce lactose free milk
- lactase enzyme molecules trapped in alginate beads where the milk is sifted through (LACTOSE HAS BEEN PREDIGESTED BY LACTASE ENZYMES)
- milk is hydrolyzed after
