wet chemical must: completely extinguish fire in fryer, prevent re-ignition for 20 min. and reduce temp 15.6’c below ignition point, cause no splashing
Saponification
A reaction that emulsifies oil to form a type of soap that floats on the surface of oil and prevents re-ignition of the oil vapors
