What is the process of starch digestion?

A

Food is chewed by the teeth, giving it a larger surface area. Saliva enters the mouth from the salivary glands and mixes with the food. Saliva contains salivary amylase which hydrolyses any starch to maltose. The amylase is denatured by the acidity of the stomach. The food mixes with pancreatic juice from the pancreas in the small intestine. The pancreatic juice contains pancreatic amylase which continues the breakdown of starch to maltose. Maltase in the epithelial lining breaks down the maltose to alpha-glucose.
