La Chablisienne, Chablis, 2014 $21
This white wine is a mineral driven with crisp and refreshing notes of green apple, white flowers and chalk. It’s a light bodied wine and pairs well with oysters or anything lean.
Chablis is very close to champagne and the grapes have high acidity. Chablis is part of Burgundy.
Food pairings: oysters, Branzino
Patient Cottat, Sancerre, Loire Valley, Anciennes Vignes, 2020 $25
This Sancerre is refreshing and very herbaceous with pronounced fruit aromas of grapefruit rind. It has more zippy and earthy qualities. It is not Oaked (stainless steel)
Food pairings: Atlantic Salmon, Branzino, Jidori chicken
Sancerre is a cooler climate in France with high acidity and less sugar content in the grapes.
Astrolabe Sauvignon Blanc, Marlborough, 2020 $17
This New Zealand Sauvignon Blanc is a private label exclusive to Cavier Bar and definitely one of our top 3 white wines. It is herbaceous with a ripe grapefruit character and vibrant acidity.
Food: oysters, fatty or hard cheeses, our Jidori chicken dish would pair nicely with this wine.
Attis Bodega Genio & Figura, Albarino, Rías Baixas, 2020 $17
Rías Baixas (Buy-shiz) is an ocean side location in Spain so you will get touch of sea spray on the palette as well as luscious aromas of white peach or papaya. It’s has a minerality and tropical tasting notes.
Food pairings: octopus, high acidic dishes, fish, or shellfish, oysters
Gustave Lorentz Riesling, Reserve Alsace 2019 $18
This dry Riesling is a classic bone dry Riesling with a clove like finish and vibrant acidity. You’ll get tasting notes green Apple with great textural structure and a clean dry finish. It coats your mouth with a waxiness like honeycomb.
Food pairings: raw or grilled fish, seafood, chicken, and goat cheese. This would pair nicely with our Jidori chicken dish.
Tablas Creek Patelin De Tablas Blanc, Paso Robles 2020 $21
This natural certified organic wine is a blend from 5 different varietals in the Rhone Valley in France. It has mild acidity with a vicious, oily texture. You’ll also get aromas of white blossoms and tropical aromatics. It has a creamy mouthful, then bright with apricot fruit and citrus. It has a long clean finish with linger notes of stone fruit and green herbs.
Food pairings:
Heavier foods like lemon and buttery foods, scallops, sharp cheddar, spicy foods
Antica Chardonnay, Napa Valley 2018 $25
It’s okay, rich, silky and fruit forward with some mild acidity. You’ll smell cheese, vanilla and yogurt with a vanilla baking spice to it.
Clos Cibonne Rosé, Tibouren, Cuvée Tradition 2019 $25
This is a certified natural wine. It’s a white wine made like a red wine. It’s high quality and is really complex with notes of white peach, fresh herbs and a mouth watering acidity. It’s bone dry with a waxy texture.
If a guest doesn’t know if they want red or white wine, recommend this rose to them.
Food Pairings:
