Quicker. Increased temps speed up rate of sugar accumulation and reduction of acidity, but don’t ripen most aromas and tannin compounds.
To not compromise flavours, tannins and colour, grapes picked with higher level of sugar= high alcohol and low acidity.
More rapid fall in acidity = higher PH in wine= problem.
