Water forms hydrogen bonds with polar surfaces
Non polar surfaces don’t form hydrogen bonds with water
Around a non polar surface, the water has to line up to form hydrogen bonds - this is called organised water / clathrate
What is disorganised water
When the non polar surfaces eachother ( in water) / interact, water doesn’t need to line up to line up to form hydrogen bonds with eachother
Why is disorganised water more favourable than organised water
There’s an increase in entropy
(entropy is higher for disorganised water than organised water )
So disorganised water is more entropically favourable
Why does a bilayer form
Hydrophilic phosphate heads face water
Whereas hydrophobic tails would want to face air. But there are no air pockets in cells, so a bilayer forms where phosphate head faces water inside and outside the cell
